Happy Birthday Victoria!

A cake full of roses..... Had so much fun doing the cake. Yellow cake with raspberry creme filling and buttercream icing. Happy BDay Sweatheart! You are a wonderful person. Glad to know you!





Pumpkin Cheesecake


  • CRUST:
  • 1 cup graham cracker crumbs
  • 1 tablespoon sugar
  • 1/4 cup butter, melted
  • FILLING:
  • 2 packages (8 ounces each) cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 can (15 ounces) solid-pack pumpkin
  • 1-1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • TOPPING:
  • 2 cups (16 ounces) sour cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 12 to 16 pecan halves

Directions


  • In a small bowl, combine the graham cracker crumbs and sugar; stir in butter. Press into the bottom of a 9-in. springform pan; chill.
  • For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat on low speed just until combined. Stir in the pumpkin, spices and salt.
  • Pour into crust. Place pan on a baking sheet. Bake at 350° for 50 minutes.
  • Meanwhile, for topping, combine the sour cream, sugar and vanilla until smooth. Spread over filling; return to the oven for 5 minutes. Cool on rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer.
  • Refrigerate overnight. Remove sides of pan. Garnish each slice with a pecan half. Refrigerate leftovers.
I didn't made the graham crust. I used a pie crust.

Pumpkin Spice Cookies

Taste of home recipe
  • 1 package (8 ounces) cream cheese, softened
  • 1-1/2 cups packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 3-1/2 cups all-purpose flour
  • 1 to 1-1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • FROSTING:
  • 2 cups confectioners' sugar
  • water or lemon juice
  • cinnamon

Directions


  • In a large bowl, beat cream cheese and sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla. Combine the dry ingredients; gradually add to pumpkin mixture and mix well.
  • Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.
  • For frosting, in a small bowl, combine the confectioners’ sugar with enough water or lemon juice to achieve frosting consistency. Frost cookies; sprinkle with cinnamon.

This years Thanksgiving cookies. The scare crow looks more like a snowman :-( but I'll try another style next year. ;-)

Yellow Zucchini Cake

I got a lot of delicious yellow zucchini's. I asked myself what can I do with them? I found an amazing recipe. The cake was so moist and delicious. I would do it again. Thanks tasty kitchen for the amazing recipe.
FOR THE CAKE:
  • 2 cups All-purpose Flour 
  • 2 teaspoons Baking Powder 
  • 2 teaspoons Baking Soda 
  • 2 teaspoons Ground Cinnamon 
  •  ½ teaspoons Salt 
  • 2 cups Sugar 
  • 1-½ cup Vegetable Oil 
  • 4 pieces Large Egg 
  • 3 cups Shredded Yellow Zucchini 
FOR THE FROSTING:
  • 2 cups Powdered Sugar 
  •  ⅓ cups Sour Cream, Room Temperature 
  • ¼ cups Butter, Softened
  •  ¾ teaspoons Vanilla Extract 
  •  ⅛ teaspoons Salt 
  • 3 Tablespoons Toasted Walnuts, Chopped, To Sprinkle On Top (I used mini chocoalte chips instead of nuts) 
Preheat oven to 325ºF. Grease a 9-inch cake pan and line the bottom with parchment paper. Sift flour, baking powder, baking soda, cinnamon and salt. Set aside. In a large bowl, whisk together sugar and oil until well blended. Add eggs, mix well. Fold in zucchini. Add in the flour mixture. Beat until well combined. Pour batter into the prepared cake pan. Bake for 50 to 55 minutes, until a toothpick inserted into the center of the cake comes out clean. Let cake cool completely before frosting. To prepare frosting, mix all frosting ingredients in a medium bowl. Beat with an electric mixer until smooth and fluffy, about 2 minutes. Pour frosting over the top of cooled cake. Sprinkle toasted walnuts on top.

Fall is around the corner

Finally! Fall is around the corner. I can't believe the summer was so busy that I didn't bake anything. I have so many cute summer cookie cutters and I didn't use a single one of them. :-( How sad BUT now with fall around the corner I really have to pick up baking again. I already get complaints from people lol. ;-)
So today I'm gonna to bake a yellow zucchini cake. Never baked with zucchini before. Wish me luck. ;-)

Flower Cupcakes

I did the flower cupcakes a while ago. Take your favourite recipe and bake cupcakes. Let them cool. Frost the cupcakes with your choice of icing (you can also use bought ones). Cut a large marshmellow in 5 slices. Dip the marshmellow in sugar (white, yellow, pink, whatever you like) right away. Arrange marshmellow paddles like a flower on top of the cupcake.

I did another sweet 16 BDay cake. It was a total surprise. They asked for cookie monster cupcakes (which I did) but then I thought, a sweet 16 girl needs a special cake. So here it is, sweety!
The most touching thing was the text message I received when she saw the cake :-)

Cranberry Marathon Part2 - White Chocolate Cranberry Cookies



Ingredients

* 1/3 cup butter, softened
* 1/2 cup packed brown sugar
* 1/3 cup sugar
* 1 egg
* 1 teaspoon vanilla extract
* 1-1/2 cups all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 3/4 cup dried cranberries
* 1/2 cup white baking chips

Directions

In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries and chips.
Drop by heaping tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned. Cool for 1 minute before removing to wire racks.

A friend gave me a huge back of dried cranberries. She asked me to bake some cookies. Well that was a challenge. I didn't know what you can do with so many cranberries. It worked out very well and I wanna join my cranberry cookie marathon with you - I was baking the whole day! ;-)

Mmmhhhh Waffles

I love waffles and I didn't had them for a long time. I always looked for a specific waffle maker. I don't like the square waffle makers. I love the one where you get heart shaped waffles but there aren't easy to find. Finally, I saw one 2 days ago and it was on sale. Yeahhhhhh!

I'm back - Whoopie Pies

I'm back and the blogging can continue. :-)
I really like Whoopie Pies. There are very handy to eat and taste delicious. Just take your favourite cake batter and do 1 tablespoon of batter on a baking sheet. Bake them approx. 10 min (350 F). Let them cool and use your favourite frosting to fill them. Yummy.

I had friends over for breakfast and I want to give them a cookie but I had no boxes left. Take a Ziploc bag, any decorative paper and one or two cookies - voila! :-)

Hefezopf

Ich bin ja nicht so ein Fan von Hefeteig backen. Ich weiss auch nicht, ich kann soviel backen aber beim Hefeteig hoert es auf - LOL. Ich finde ihn so unausgeglichen. Ich backe und alles ist perfekt. Mache ich das gleiche Rezept (manchmal sogar gleich hintereinander) und es gelingt mir nicht und etwas geht mit dem Hefeteig schief. Grrrrrr.....
Aber hier habe ich ein paar Fotos von einem Erfolgshefezopf LOL ;-)




Rezept (Dr.Oetker aber jedoch etwas abgewandelt von mir):
Für das Backblech:
Backpapier

Hefeteig:
250 g Schlagsahne
500 g Weizenmehl
1 Pck. Dr. Oetker Trockenbackhefe
150 g Zucker
1 Pck. Dr. Oetker Vanillin-Zucker
1 Pck. Dr. Oetker Finesse Geriebene Zitronenschale
1 Pr. Salz
1 Ei (Größe M)

Zum Bestreichen:
1 Eigelb (Größe M)
1 EL Milch

Hefeteig: Sahne in einem kleinen Topf erwärmen. Mehl mit Hefe in einer Rührschüssel sorgfältig vermischen. Übrige Zutaten hinzufügen und alles mit einem Mixer (Knethaken) kurz auf niedrigster, dann auf höchster Stufe in etwa 5 Min. zu einem glatten Teig verarbeiten. Den Teig zugedeckt so lange an einem warmen Ort gehen lassen, bis er sich sichtbar vergrößert hat. Bei mir ist das meistens in ca. 45 min. da ich den Backofen auf 50 Grad stelle und den Hefeteig dann darin gehen lasse.
Teig mit Mehl bestreuen und auf leicht bemehlter Arbeitsfläche kurz durchkneten. Aus dem Teig 3 etwa 30 cm lange Rollen formen. Die Rollen zu einem Zopf flechten.
Das Backblech mit Backpapier belegen, den Zopf darauflegen. Backofen vorheizen.
Ober-/Unterhitze: etwa 180°C
Heißluft: etwa 160°C
Den Zopf nochmals so lange an einem warmen Ort gehen lassen, bis er sich sichtbar vergrößert hat. Ich lasse das Backblech auf dem Ofen stehen, da der Backofen durchs Vorwaermen genuegend Waerme abgibt. Eigelb mit Milch verschlagen und den Zopf damit bestreichen.
Einschub: Mitte
Backzeit: etwa 30-40 Min.

Den Hefezopf mit dem Backpapier auf einen Kuchenrost ziehen und erkalten lassen.


Tipps:

Für einen Rosinenzopf kneten Sie nach der ersten Teiggehzeit 200 g Rosinen kurz unter den Teig.
Für einen Hefezopf mit exotischen Trockenfrüchten können Sie auch 200 g exotische Trockenfrüchte, grob gehackt, nach der ersten Teiggehzeit kurz unter den Teig kneten.

DIY gift box

I need a lot of gift boxes. I bought a magazine with DIY gift ideas. They had some amazing ideas how you can use household items to create wonderful gift boxes. I would like to share some ideas with you. I saved already a lot of money by using household items. Have a look.

Take a tea box and clean the inside. Also take some craft paper.


Glue the craft paper on the tea box. I used double side glue tape, which is very easy to use.


Attach a ribbon and fill the box with cookies. :-)

DIY birthday gift

My friend loves coffee, hot chocolate,...she is a fan of dark chocolate and has a sweet tooth. How can I combine all this in one birthday gift?
I bought a large mug. The mug said Live-Laugh-Love. I dipped pink spoons into rich dark belgian chocolate and sprinkled them with cocos, crocant and crushed chocolate coffee beans. She can take a spoon, dip it into the hot beverage and the chocolate will melt away with all the flavours in it. Isn't that fun? Her guests asked me where I bought the spoons. ;-)

Meine Freundin trinkt gerne Kaffee und heisse Schokolade. Sie liebt Zartbitterschokolade. Ich habe mir ueberlegt wie ich das in ein Geschenk verpacken kann. Somit habe ich ihr eine schoene Tasse gekauft. Auf der Tasse steht Live-Laugh-Love. Ich habe Essloeffel mit belgischer Zartbitterschokolade ueberzogen. Das ganze habe ich dann noch mit Kokosflocken, Krokant und zerkleinerten Schokoladenkaffeebohnen bestreut. Jetzt kann sie ihr Heissgetraenk mit einem Schokoladenloeffel umruehren. Die Schokolade schmilzt und das ganze bekommt einen tollen Geschmack. Ihre Gaeste haben mich gefragt wo ich die Schokoladenloeffel gekauft habe. ;-)
