Marbled Brownies

I'm not a big fan of brownies but I found this recipe on pinterest. I thought/hoped it would be good. Let me tell ya it's beyond good. It's one of the best brownies I ever had! You have to try this recipe!



  • 125g butter, chopped
  • 125g CADBURY Dark Cooking Chocolate, chopped ( I used milk chocolate Chipits)
  • 1 cup brown sugar (I used yellow golden brown sugar)
  • 3 eggs, lightly beaten
  • 1/3 cup flour
  • 1/3 cup of CADBURY Bournville Cocoa (I used Red Rubin Cacoa)
  • 1/4 teaspoon baking powder
  • 250g PHILADELPHIA Spreadable Light Cream Cheese
  • 1/4 cup caster sugar (I used normal sugar)
  • 1 egg, extra, lightly beaten 
  1. Combine the butter, chocolate and brown sugar in a saucepan and stir over a medium heat until chocolate and butter have melted. Remove from heat and whisk in the eggs. Add the sifted flour, Cocoa and baking powder. Stir until well combined then pour into a greased and base lined 18cm x 28cm slice pan
  2. Beat the PHILLY, caster sugar and extra egg until smooth and creamy. Spoon randomly over chocolate mixture and swirl with the tip of a knife
  3. Bake in a moderate oven 180 C for 35-40 minutes or until cooked through. Cool on a wire rack before cutting into 24 pieces

Happy Birthday Victoria!

A cake full of roses..... Had so much fun doing the cake. Yellow cake with raspberry creme filling and buttercream icing. Happy BDay Sweatheart! You are a wonderful person. Glad to know you!





Pumpkin Cheesecake


  • CRUST:
  • 1 cup graham cracker crumbs
  • 1 tablespoon sugar
  • 1/4 cup butter, melted
  • FILLING:
  • 2 packages (8 ounces each) cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 can (15 ounces) solid-pack pumpkin
  • 1-1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • TOPPING:
  • 2 cups (16 ounces) sour cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 12 to 16 pecan halves

Directions


  • In a small bowl, combine the graham cracker crumbs and sugar; stir in butter. Press into the bottom of a 9-in. springform pan; chill.
  • For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat on low speed just until combined. Stir in the pumpkin, spices and salt.
  • Pour into crust. Place pan on a baking sheet. Bake at 350° for 50 minutes.
  • Meanwhile, for topping, combine the sour cream, sugar and vanilla until smooth. Spread over filling; return to the oven for 5 minutes. Cool on rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer.
  • Refrigerate overnight. Remove sides of pan. Garnish each slice with a pecan half. Refrigerate leftovers.
I didn't made the graham crust. I used a pie crust.

Pumpkin Spice Cookies

Taste of home recipe
  • 1 package (8 ounces) cream cheese, softened
  • 1-1/2 cups packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 3-1/2 cups all-purpose flour
  • 1 to 1-1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • FROSTING:
  • 2 cups confectioners' sugar
  • water or lemon juice
  • cinnamon

Directions


  • In a large bowl, beat cream cheese and sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla. Combine the dry ingredients; gradually add to pumpkin mixture and mix well.
  • Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.
  • For frosting, in a small bowl, combine the confectioners’ sugar with enough water or lemon juice to achieve frosting consistency. Frost cookies; sprinkle with cinnamon.

This years Thanksgiving cookies. The scare crow looks more like a snowman :-( but I'll try another style next year. ;-)

Yellow Zucchini Cake

I got a lot of delicious yellow zucchini's. I asked myself what can I do with them? I found an amazing recipe. The cake was so moist and delicious. I would do it again. Thanks tasty kitchen for the amazing recipe.
FOR THE CAKE:
  • 2 cups All-purpose Flour 
  • 2 teaspoons Baking Powder 
  • 2 teaspoons Baking Soda 
  • 2 teaspoons Ground Cinnamon 
  •  ½ teaspoons Salt 
  • 2 cups Sugar 
  • 1-½ cup Vegetable Oil 
  • 4 pieces Large Egg 
  • 3 cups Shredded Yellow Zucchini 
FOR THE FROSTING:
  • 2 cups Powdered Sugar 
  •  ⅓ cups Sour Cream, Room Temperature 
  • ¼ cups Butter, Softened
  •  ¾ teaspoons Vanilla Extract 
  •  ⅛ teaspoons Salt 
  • 3 Tablespoons Toasted Walnuts, Chopped, To Sprinkle On Top (I used mini chocoalte chips instead of nuts) 
Preheat oven to 325ºF. Grease a 9-inch cake pan and line the bottom with parchment paper. Sift flour, baking powder, baking soda, cinnamon and salt. Set aside. In a large bowl, whisk together sugar and oil until well blended. Add eggs, mix well. Fold in zucchini. Add in the flour mixture. Beat until well combined. Pour batter into the prepared cake pan. Bake for 50 to 55 minutes, until a toothpick inserted into the center of the cake comes out clean. Let cake cool completely before frosting. To prepare frosting, mix all frosting ingredients in a medium bowl. Beat with an electric mixer until smooth and fluffy, about 2 minutes. Pour frosting over the top of cooled cake. Sprinkle toasted walnuts on top.

Fall is around the corner

Finally! Fall is around the corner. I can't believe the summer was so busy that I didn't bake anything. I have so many cute summer cookie cutters and I didn't use a single one of them. :-( How sad BUT now with fall around the corner I really have to pick up baking again. I already get complaints from people lol. ;-)
So today I'm gonna to bake a yellow zucchini cake. Never baked with zucchini before. Wish me luck. ;-)

Flower Cupcakes

I did the flower cupcakes a while ago. Take your favourite recipe and bake cupcakes. Let them cool. Frost the cupcakes with your choice of icing (you can also use bought ones). Cut a large marshmellow in 5 slices. Dip the marshmellow in sugar (white, yellow, pink, whatever you like) right away. Arrange marshmellow paddles like a flower on top of the cupcake.

I did another sweet 16 BDay cake. It was a total surprise. They asked for cookie monster cupcakes (which I did) but then I thought, a sweet 16 girl needs a special cake. So here it is, sweety!
The most touching thing was the text message I received when she saw the cake :-)

Cranberry Marathon Part2 - White Chocolate Cranberry Cookies



Ingredients

* 1/3 cup butter, softened
* 1/2 cup packed brown sugar
* 1/3 cup sugar
* 1 egg
* 1 teaspoon vanilla extract
* 1-1/2 cups all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 3/4 cup dried cranberries
* 1/2 cup white baking chips

Directions

In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries and chips.
Drop by heaping tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned. Cool for 1 minute before removing to wire racks.

Mmmhhhh Waffles

I love waffles and I didn't had them for a long time. I always looked for a specific waffle maker. I don't like the square waffle makers. I love the one where you get heart shaped waffles but there aren't easy to find. Finally, I saw one 2 days ago and it was on sale. Yeahhhhhh!

I'm back - Whoopie Pies

I'm back and the blogging can continue. :-)
I really like Whoopie Pies. There are very handy to eat and taste delicious. Just take your favourite cake batter and do 1 tablespoon of batter on a baking sheet. Bake them approx. 10 min (350 F). Let them cool and use your favourite frosting to fill them. Yummy.
